Banana French Toast Casserole Recipe

Ingredients

  • 8 to 10 thick slices stale crusty bread
  • 2 ripe bananas
  • 1 cup almond milk
  • 2 tbsp coconut oil
  • 2 tbsp flax meal
  • ½ tsp ground cinnamon
  • 1 cup Envirokidz Panda Puffs Cereal
  • Maple syrup, for serving
  • Fresh fruit, for serving

Instructions

  1. Preheat the oven to 350F. Lightly oil an 8 x 11 inch casserole dish. Cut the bread into 1-inch slices and pile into the prepared dish.
  2. Using a blender, blend the bananas, almond milk, coconut oil, flax and cinnamon until smooth. Pour over the bread, making sure to coat all the bread on the top layer. Sprinkle the cereal over top. Bake for 50 to 60 minutes or until browned on top and the centre is cooked. Allow to cool for about 10 minutes. Serve with maple syrup and fresh fruit.
