Ingrédients

  • 2 cups Chickpea
  • ½ cup Peanut Butter – natural and runny
  • ¼ cup Maple Syrup
  • ½ cup Gluten-Free Rolled Oats
  • ¼ cup Dairy-Free Chocolate Chips
  • 2 Tbsp Envirokidz Choco Chimp - divided
  • 2 Tbsp Envirokidz Koala Crisp – divided

Tip:

  • Substitute the peanut butter for seed butter if there is a nut-allergy
  • If the peanut butter is too thick, briefly heat it with the maple syrup in the microwave or on the stove-top to make it easier to stir into the chickpea-Envirokidz mixture
  • Substitute the maple syrup for honey/vegan honey 
     

Instructions

  1. In a food processor, add the chickpea and pulse a few times until broken down
  2. Add 1 Tbsp each of Envirokidz Choco Chimp and Envirokidz Koala Crisp. Pulse 3 times
  3. In a bowl, combine the mashed chickpea-Envirokidz mixture with the runny peanut butter and maple syrup
  4. Stir in the oats and chocolate chips
  5. Use a cookie scoop to scoop the dough and roll into a ball between your palms
  6. Place in the refrigerator and allow it to chill for an hour
  7. Create your Caterpillar by using the remaining Envirokidz Choco Chimp for the eyes and Envirokidz Koala Crisp for the legs!
