Mixed Berry & Almond Chia Seed Pudding

This mixed berry and almond chia seed pudding gets a nutritious boost from added buckwheat and hemp seeds (thanks to the Qi'a Superfood Cereal base!) Top this berry-filled chia seed pudding with a sprinkle of Vanilla Almond Granola and fresh berries for a beautiful, nutritious breakfast.

Mixed Berry & Almond Chia Seed Pudding Recipe

Ingredients

  • 1/2 cup Cranberry Vanilla Qi'a Superfood Cereal
  • 1/2 cup almond milk (use homemade for extra almond flavor)
  • 2 tbsp dried cranberries
  • 2 tbsp maple syrup
  • Drop pure vanilla extract
  • Pinch salt
  • 2/3 cup fresh or frozen mixed berries (strawberries, blueberries, blackberries, and raspberries)

Instructions

  1. In a medium sized bowl, combine the Qi’a cereal, almond milk, cranberries, maple syrup, vanilla, and salt. Stir well to break up any Qi’a cereal lumps.
  2. Add the mixed berries and stir well before transferring the chia seed pudding to the fridge. Chill for a minimum of 2 hours (overnight is preferred to allow the Qi’a cereal to absorb all of the liquid and fully thicken the chia seed pudding).
  3. Stir well and thin with almond milk if necessary. Top with fresh mixed berries and a handful of Vanilla Almond Granola.
