Chocolate-Covered Banana Bites

Banana chunks are dipped in melted chocolate and covered in fun toppings to make this simple, kid-friendly snack. Be sure to use firm, but ripe bananas so they don't fall apart when you're dipping!

Chocolate-Covered Banana Bites Recipe

Ingredients

  • 2 medium to large bananas
  • 1 cup dairy-free chocolate chips
  • 2 tsp virgin coconut oil
  • ½ cup shredded coconut
  • ⅓ cup EnviroKidz Koala Crisp cereal
  • ¼ cup finely chopped peanuts

Instructions

  1. Line a small cookie sheet with parchment paper and set aside.
  2. Melt the chocolate chips and coconut oil using a double boiler over low heat, stirring occasionally until fully melted. Remove from heat. 
  3. Slice the bananas widthwise into 1-inch pieces and, using a toothpick, dip each slice into the melted chocolate, allowing excess to drip off.
  4. Dip into coconut to cover, then peanuts, and finally the cereal. Place on the prepared pan and remove the toothpick. Repeat with remaining banana slices.
  5. Place the pan in the freezer until set, at least 20 minutes.
