Steel Cut Oat Pancakes Recipe

Ingredients
- ½ cup Nature’s Path Organic’s Quick Cook Steel Cut Oats
- ¾ cup soymilk or milk
- 1 tbsp ground flax
- 1 tbsp maple syrup or honey
- ¼ cup all-purpose flour
- 2 tsp baking powder
- Coconut oil, for greasing pan
Instructions
- Whisk together oats, soymilk, ground flax, and maple syrup. Set aside for 5 minutes. Whisk in flour and baking powder.
- Preheat a pan over medium heat. Add a small amount of oil to the hot pan before cooking batter in ¼ cup spoonfuls. Cook for 1 ½ - 2 minutes, flip once the center begins to bubble and the edges look cooked. Flip and cook for another 1 ½ - 2 minutes or until golden-brown on both sides.
