Berry Chia Crumble Bars
What could be a better sweet vegan treat than these chia berry crumble bars that are certainly fruity & delicious, but a nutritious choice too!
Berry Chia Crumble Bars Recipe

Ingredients
- 3 cups fresh or frozen raspberries & blueberries
- ⅓ cup + ½ cup organic cane sugar
- 3 tbsp chia seeds
- 3 cups Nature’s Path Organic Gluten Free Old Fashioned Oats (1 ½ cups ground into flour)
- ½ tsp baking powder
- ½ cup vegan butter or butter, melted
- ¼ cup large flaked coconut
- 2 tbsp raw pumpkin seeds
Instructions
- In a medium saucepan, cook berries, ⅓ cup sugar, and chia seeds over medium heat. Simmer for 10 minutes, stirring often.
- Preheat oven to 350°F/177°C. Line a 9x9 baking pan with parchment paper.
- Combine butter and ½ cup sugar. Add oat flour, oats, and baking powder to form a crumbly dough.
- Firmly press 2/3 of the dough into the pan, spread with berry-chia filling and top with remaining dough, coconut, and pumpkin seeds. Bake for 25-30 minutes. Cool before slicing.
