Chocolate-Covered Banana Bites
Banana chunks are dipped in melted chocolate and covered in fun toppings to make this simple, kid-friendly snack. Be sure to use firm, but ripe bananas so they don't fall apart when you're dipping!
Chocolate-Covered Banana Bites Recipe

Ingredients
- 2 medium to large bananas
- 1 cup dairy-free chocolate chips
- 2 tsp virgin coconut oil
- ½ cup shredded coconut
- ⅓ cup EnviroKidz Koala Crisp cereal
- ¼ cup finely chopped peanuts
Instructions
- Line a small cookie sheet with parchment paper and set aside.
- Melt the chocolate chips and coconut oil using a double boiler over low heat, stirring occasionally until fully melted. Remove from heat.
- Slice the bananas widthwise into 1-inch pieces and, using a toothpick, dip each slice into the melted chocolate, allowing excess to drip off.
- Dip into coconut to cover, then peanuts, and finally the cereal. Place on the prepared pan and remove the toothpick. Repeat with remaining banana slices.
- Place the pan in the freezer until set, at least 20 minutes.
