Veggie Skewers with Vegan Chickpea Ranch Dressing Recipe

Ingredients

Vegan Chickpea Ranch Dressing

  • 1 cup cooked chickpeas
  • ½ cup unsweetened soy milk
  • 2 tbsp lemon juice
  • 1 clove garlic, minced, soaked in water and drained
  • ½ tsp salt
  • Water, to thin
  • 1 tbsp fresh parsley, minced
  • 1 tbsp fresh chives, minced
  • 1 tbsp fresh dill, minced

Veggie Skewers

  • 1 cucumber
  • 2 carrots, peeled
  • 1 cup grape tomatoes
  • 1 cup radishes
  • 6 bamboo skewers

Instructions

Chickpea Ranch Dressing
  1. In a high-speed blender, combine chickpeas, unsweetened soy milk, lemon juice, garlic, and salt. Let sit for 5 minutes before blending.
  2. Blend on high speed until smooth and creamy. Thin with water (approx. 1-2 tbsp) to make a creamy dressing-like consistency.
  3. Add fresh herbs, blend briefly to combine. Do not overblend herbs.
  4. Taste and adjust seasoning as needed. Chill.
Veggie Skewers
  1. Wash and prepare your vegetables. Cut cucumbers into ½ - ¾ inch rounds. Cut radishes into ½ inch rounds. Use a vegetable peeler to slice carrots into long ribbons.
  2. Use small star or flower-shaped cookie cutters to cut cucumbers and radishes into different shapes.
  3. Build your veggie skewers! Alternate cucumber and radish cut-outs with cherry tomatoes and carrot ribbons. Thread the end of the carrot ribbons onto the skewers and gently fold them into accordion shapes, threading them onto the skewer as you go.
  4. Serve with Chickpea Ranch Dressing or your favourite salad dressing!
