Vegan Queso Fundido

Vegan Queso Fundido

A creamy flavorful queso crafted with a blend of rolled oats, nutritional yeast, and a touch of smoked paprika for that perfect smokiness.


  • 1 cup rolled oats 
  • 2 Tbsp cornstarch 
  • ½ cup nutritional yeast powder 
  • 1 tsp onion powder 
  • 2 tsp salt 
  • 2 tsp sugar 
  • ¼ tsp smoked paprika 
  • 1 jar 285ml Roasted Sweet Red Peppers including liquid 
  • 2 tsp apple cider vinegar 
  • 1 Tablespoon Dijon mustard 
  • 2 cups water 
  • ½ lemon 


Add all the ingredients, except the lemon, into a Vitamix or highspeed blender. Blend on high for 4 minutes continuously.  The mixture should be hot and thickened when finished. Squeeze the lemon into the mix and stir to combine. Serve warm with Que Pasa Round Tortilla chips!
