Mulled Fruit Superfruit Parfaits

Mulled Fruit Superfruit Parfaits Recipe

Cook time: 25 Minutes
Servings: 8 cups

Ingredients

  • Sambazon Acai Superfruit Packs, original blend with Guarana (thawed)
  • 1/2 cup fresh squeezed orange juice
  • 2 (2-inch) strips orange zest
  • 1 cinnamon stick
  • 2 whole cloves
  • 2 to 3 coins fresh ginger
  • 1 tsp vanilla extract
  • 2 pears, peeled and chopped (2 cups)
  • 2 Granny Smith apples, peeled and chopped (2 cups)
  • 2 cups plain 2% Greek yogurt
  • 1/4 cup honey
  • 2 cups Nature’s Path Vanilla Almond + Flax Granola

Instructions

  1. Add fruit packs, orange juice, zest, cinnamon, cloves, ginger and vanilla to a medium saucepan set over medium-high heat; bring to a boil.
  2. Stir in pears and apples; bring to a simmer.
  3. Reduce heat to medium.
  4. Simmer, stirring occasionally, for 10 to 15 minutes or until fruit is tender.
  5. Strain fruit, reserving liquid and spices.
  6. Return liquid to saucepan with orange peel, cinnamon stick and cloves; discard ginger.
  7. Bring to a boil over medium high heat.
  8. Cook, stirring often, for 10 minutes or until thick, syrupy and coats the back of a spoon.
  9. Cool fruit and reduced sauce completely.
  10. Stir yogurt with honey until well combined.
  11. Layer each serving glass with 1/4 cup yogurt mixture, 1/4 cup fruit, 1 tbsp reduced sauce, and 1/4 cup granola.
