Mesa Sunrise Pancakes

These easy vegan pancakes are made extra special topped with multigrain cereal flakes. Serve them with your favourite nut butter, maple syrup and fresh berries for a satisfying breakfast.  

Mesa Sunrise Pancakes Recipe

Ingredients

  • 1 1/3 cups unbleached white flour
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 1 1/4 cups vanilla nondairy milk, plus more to thin out
  • 1 tbsp pure maple syrup
  • 1/2 cup Nature’s Path Mesa Sunrise Cereal

Instructions

  1. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt. Add the nondairy milk and maple syrup and whisk until well combined and no large clumps of flour remain. Add more nondairy milk to thin out as needed.
  2. Heat a nonstick frying pan over medium/high heat. Once hot, use a cookie scooper to scoop the batter into the pan. Gently press some cereal flakes over the top of the batter. Cook until the pancakes just start to bubble on top and the edges look dry, then flip over and cook the other side until browned. Repeat with remaining batter. Serve immediately.
