Taco Bites

Mini taco snacks for a BIG win at your next fiesta. Fill up these bite-size shells with your favourite ingredients for all the savory deliciousness without the typical taco mess.

Taco Bites Recipe

Servings: Serves a fiesta of friends

Ingredients

  • 1 pack of organic corn tortillas
  • 2 14oz cans refried beans
  • 1 jar Que Pasa salsa
  • 1/2 bunch green onion, sliced
  • 1/2-3/4 cup grated cheese of your choice (dairy or non dairy)
  • fresh jalapenos sliced (optional)
  • pitted olives sliced (optional)
  • sour cream (optional)

Instructions

  1. Preheat oven to 350.
  2. Warm up tortillas in microwave (or the oven as it heats up) – just enough to soften the tortillas – this step helps prevent tortillas from tearing. Then, using a circle-shaped cookie cutter (or even possibly the top of a mug or jar) cut out tortillas to fit your mini muffin tin. (Test one before cutting all of them.)
  3. Press the warm, circle tortillas into the mini muffin tin and bake for 10-12 minutes – until the tortillas are crispy and slightly browned.
  4. Remove from the oven and – if you’re serving right away – begin to layer the rest of the ingredients. (If not serving immediately – simply prep the shells and finish the recipe shortly before serving.) Add a little dollop of refried beans into each shell, followed by a little scoop of salsa, green onion, grated cheese and a slice of jalapeno or olive if you like.
  5. Put the tray back in the oven for up to 5 minutes – just enough to melt the cheese. Serve immediately with a little dollop of sour cream on top if you like!
