Rice Crispy Whale Dessert Recipe

Chill time: 25 Minutes
Servings: 2 whales

Ingredients

  • 3 Tbs butter
  • 4 cups mini marshmallows
  • 6 cups Envirokidz Koala Crisp
  • 1/2 cup dark chocolate chips
  • 2-3 Tbs Coconut Oil
  • 3 rectangles of wax paper about 8'x11"
  • 2 dishtowel, folded over and rolled up

Instructions

  1. Prep your work area: Spread one sheet of wax paper out on a flat surface.  Under the short end of the rectangle, place the rolled up dishtowel.  Set the coconut oil next to the wax paper.
  2. In a large pot, melt the butter. Add the marshmallows and stir them until they have completely melted.  Add the Koala Crisp and stir until coated.
  3. Quickly take the pot of Koala Crisp over to the wax paper, and rub the coconut oil on your hands, coating liberally.
  4. Once the Koala crisp is cool enough to touch, but still very pliable, take a cantaloupe sized amount of the Koala Crisp and set it down on the wax paper. Begin to form it into the whale, packing it tightly with your hands.
  5. Form the tail, and prop it up on the towel. Make a slight dent in the top of the whale's head for the water spout.
  6. Repeat for the second whale. Push a chocolate chip in on either side of the whale's head for eyes.
  7. Stick the whale in the refrigerator.
  8. Next, melt a 1/4 cup of chocolate chips in a heat safe bowl in the microwave. Do it in 30 second increments until it is all melted, then add the rest of the chocolate chips, and stir until those are melted, too. With a fork or thin spatula, drizzle the chocolate onto a piece of wax paper to make the water spout.
  9. Stick this piece of wax paper in the refrigerator as well.
