Creamy Peanut Butter Clusters Recipe

Ingredients

  • 1/2 cup peanut butter
  • 1/3 cup melted coconut oil
  • 1/4 cup coconut cream
  • 1/3 cup maple syrup
  • 1/4 tsp pure vanilla
  • 4 cups of Rice Puffs
  • 1/2 cup (100g) chopped dark chocolate, for drizzle

Instructions

  1. In a large bowl, combine peanut butter, melted coconut oil, coconut cream, maple syrup, and vanilla. Whisk until smooth.
  2. Stir in Rice Puffs, mixing until cereal is completely coated.
  3. Scoop spoonfuls of the mixture onto a baking sheet lined with parchment paper. Chill in freezer.
  4. Melt dark chocolate in a double boiler. Drizzle chocolate over peanut butter clusters.
  5. Chill to harden chocolate and store in refrigerator.
