Vegan Keto Breakfast Cookie Recipe

Ingredients
- ½ cup nut butter
- ¼ cup keto sweetener such as monk fruit or Stevia
- ½ tsp baking soda
- 1 tbsp chia seed (mix with 3 tbsp water and leave in fridge to set)
- ½ cup Nature’s Path Ketola Crunch Organic Granola
Instructions
- Preheat Oven to 350˚F.
- Prepare keto cookie base by placing nut butter, sweetener, chia seed mixture and baking soda in a bowl.
- Mix in Ketola Granola until fully combined.
- Use an ice cream scoop to create balls of dough, placing them on a parchment-lined baking tray.
- Bake in oven for 10-12 minutes, depending on the size of your cookies.
- Remove from oven and allow to cool in the tray before transferring to wire rack.
