Grilled Corn Crostini

Grilled Corn Crostini Recipe

Ingredients
- 1/4 cup oil
- 2 tbsp lime juice
- 2 tsp lime zest
- 2 tsp ground cumin
- 1 tsp each salt and pepper
- 6 corn cobs
- 1 cup seeded and diced tomatoes
- 2 jalapenos, seeded and diced
- 1/2 cup finely chopped red onion
- 1/2 cup chopped cilantro
Instructions
- Whisk oil with lime juice, lime zest, cumin, salt and pepper. Brush over corn. Grill corn, basting often, for 10 minutes or until tender. Cool completely.
- Cut kernels from cobs and toss with tomato, jalapeno, onion and cilantro. Adjust seasoning to taste. Arrange chips on a platter and top with a small spoonful of the corn mixture.
