Banana Chocolate Chip Sheet Pan Pancakes Recipe
Servings:
6-8 servings
Ingredients
- 3 packages Brown Sugar Maple Oatmeal
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- Pinch of salt
- 2 medium ripe bananas
- 1 cup milk or milk alternative
- 1 tbsp vegetable oil (such as coconut)
- 2/3 cup mini chocolate chips
Instructions
- Preheat oven to 425° F and line a 9" x 13" sheet pan with foil or non-stick paper.
- In a medium bowl, mash bananas with a fork. Mix with milk and vegetable oil. Add oatmeal, flour, baking powder, and salt. Mix until mostly combined (a few lumps is fine). Mix in 1/2 cup mini chocolate chips.
- Pour batter into prepared sheet pan and smooth until an even layer is created. Sprinkle with remaining chocolate chips.
- Bake for 10-15 minutes and until pancakes start to pull away from the sides of the pan and begin to brown.
- Broil for 2-3 minutes on low to create more of a golden top (sheet pan pancakes generally won’t brown as much as regular ones).
- Serve with syrup if desired.
