Wilted Greens Tart with Flax Plus Pastry Crust

Are your salad greens looking a little sad? Cheer up your leftover greens by cooking them down to intensify their flavour and colour in this tart that kicks food waste to the curb. Baby spinach, kale, and arugula are great candidates, but you can use whatever greens you have on hand, from hearty collards to tender beet greens to fragrant herbs.

Wilted Greens Tart with Flax Plus Pastry Crust Recipe

Cook time: 45 Minutes
Servings: 12 servings

Ingredients

Flax Plus Pastry Crust:

Filling:

  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 12 cups (about 8 oz) packed mixed greens, such as 4 cups baby spinach, 4 cups shredded kale and 2 cups arugula
  • 1 tsp egg replacer
  • 1 tbsp fresh chopped dill
  • 1 tsp finely grated lemon zest
  • 1/4 tsp each salt and pepper
  • 1/2 cup finely crumbled feta cheese

Instructions

  1. Mix flour with salt. Stir flour with salt in a large bowl.
  2. Cut in butter with a pastry blender or your fingertips until mixture resemble coarse meal (some big pieces are okay.)
  3. Stir in water with fork until flour is moistened.
  4. Toss in cereal.
  5. Transfer into a 9-inch tart pan with removable bottom.
  6. Press the crust firmly into the bottom and up the sides of the pan.
  7. Set in the freezer for 15 to 20 minutes or until the crust is firm.
  8. Preheat oven to 375°F. Prick bottom of tart with fork.
  9. Cover with aluminum foil and fill with baking weights.
  10. Bake for 30 to 45 minutes or and crust is golden brown.
  11. Remove foil and weights.
Filling
  1. Meanwhile, heat oil in a large skillet set over medium heat.
  2. Add garlic and green onions.
  3. Cook for 2 minutes or until softened.
  4. Add greens, egg replacer dill, lemon zest, salt and pepper.
  5. Cook for 4 to 5 minutes or until wilted.
  6. Cool completely and squeeze out excess moisture.
  7. Scrape filling into crust.
  8. Sprinkle feta cheese evenly over top the greens.
  9. Bake for 5 to 8 minutes or until heated through.
Tip: Garnish with dried cranberries or toasted pine nuts for added texture.
