  1. Gently heat coconut milk (ensure it's very well shaken, if the coconut milk is still separated whisk to blend the cream with the milk portion) in a small pot over low heat until just starting to simmer.
  2. Pour heated coconut milk over 1 cup of vegan chocolate chips. Set aside for 5 minutes and then stir to combine. If chips are not melted place in microwave for short bursts (15-20 seconds) until completely melted. Refrigerate for at least 3 hours or overnight.
  3. Scoop chocolate mixture, using a tablespoon, and roll into a ball. Roll in crushed Red Berry Love Crunch Granola and return to fridge while preparing the remaining truffles.
  4. Melt remaining 1/4 cup of chocolate in short bursts in the microwave.
  5. Carefully pierce 2 raspberries, one strawberry, and one truffle with a medium size toothpick while adding a dollop of melted chocolate between each piece of fruit and truffle. Return to fridge for 10 minutes or until set.
