Mixed Berry & Bran Fruit Crisp

This simple one-bowl fruit crisp is made with minimal sugar, frozen berries, healthy cereal, and oats. Use organic cane sugar or coconut sugar for a more naturally-sweetened dessert. Serve this fruity berry crisp with coconut whip for a delicious cold-weather dessert that still whispers “summer”.

Mixed Berry & Bran Fruit Crisp Recipe

Ingredients

Crisp

  • 3 cups (750ml) frozen mixed berries (I used blueberries and raspberries)
  • 1 tbsp (15ml) cornstarch
  • 3 tbsp (45ml) sugar
  • 1/2 cup (125ml) SmartBran Cereal
  • 1/4 cup (60ml) flour
  • 1/2 cup (125ml) Old Fashioned Oats
  • 1/3 cup (80ml) melted vegan butter

Coconut Whip

  • 14 fl. oz (414 ml) can of high quality coconut cream, chilled overnight
  • 2 tbsp berry sugar
  • Flaked coconut, to serve

Instructions

Crisp
  1. Preheat oven to 350°F. Line a loaf pan with parchment paper.
  2. Layer berries into the pan.
  3. Sprinkle evenly with sugar and cornstarch.
  4. In a bowl, combine SmartBran Cereal, sugar, flours, old fashioned oats, and vegan butter. Stir well until the mixture sticks together a little bit.
  5. Top the previously sprinkled berries evenly with the crumble mixture.
  6. Bake for 40 minutes or until the topping appears lightly golden-brown.
  7. Serve with coconut whip (directions below) and flaked coconut.
Coconut Whip
  1. Open chilled coconut cream and scoop out the thickest portion. Discard or save the remaining coconut water for smoothies.
  2. Beat the thick coconut cream with 2 tbsp berry sugar. Beat on high speed until coconut cream is thick and airy.
  3. Chill until needed.
