Cereal Topped Jam Bars

Cereal Topped Jam Bars Recipe

Ingredients

  • 1/2 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1 cup flour
  • 1/2 tsp baking soda
  • 2 cups oats, divided
  • 1 cup chia seed jam
  • 1/2 cup Gorilla Munch Cereal

Instructions

  • Preheat your oven to 350° F. Grease a 2-quart or 11" x 7" baking dish.
  • In a small bowl, combine the coconut oil, maple syrup and vanilla.
  • In a larger bowl, combine the flour, baking soda, and 1 1/2 cups oats. Add the coconut oil mixture and stir to combine. Spread 2/3 of this mixture in a greased baking dish. Spread the jam in an even layer over top.
  • Take the last third of the oat mixture, and add another 1/2 cup of oats and mix to combine. Sprinkle over the top of the jam layer, and bake for 30-35 minutes until set and turning golden. Add the 1/2 cup of Gorilla Munch Cereal immediately, and carefully press down to set it in the mixture.
  • Let cool, then refrigerate for 30 minutes. Serve when firm.
