Quinoa Salad with Champagne Citrus Dressing

It's great for a quick meal at home, or you can easily prep it ahead of time to take with you on the go - keeping your healthful resolutions going. I mean, champagne (citrus vinaigrette) for lunch? Yes, please!

Quinoa Salad with Champagne Citrus Dressing Recipe

Ingredients

Quinoa Salad:

  • 1 can fava beans, washed
  • 2 cups cooked quinoa
  • 2 oranges, peeled and diced
  • 1/2 cup fresh mint, chopped
  • 1 pomegranate
  • 1/2 cup mixed sprouts

CHAMPAGNE CITRUS DRESSING:

  • ⅓ cup olive oil
  • 3 tablespoons champagne vinegar
  • ¼ cup fresh orange juice
  • 1 ½ tablespoons maple syrup
  • ½ teaspoon dijon mustard
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Cook the quinoa according to the directions on the package. Once it is cooked, transfer to a medium size bowl and allow to cool in the fridge for 20 minutes.
  2. In a small bowl, whisk together dressing ingredients and set aside.
  3. Once quinoa has cooled off, toss all the ingredients and the dressing together. Transfer to your favorite bowl and enjoy immediately.
  4. This salad will keep well in the fridge for up to 5 days, without the dressing.
