Warming Curried Oatmeal Recipe

Ingredients
- ½ cup vegetable stock
- ½ cup coconut milk
- 1 tbsp tomato paste
- ½ tsp coriander
- ¼ tsp cumin
- ¼ tsp ground ginger
- ¼ tsp turmeric powder
- 2 cups Nature's Path Golden Turmeric Superfood Oatmeal
- Sea Salt & Black Pepper
- 1/3 cup canned chickpeas (drained)
- 3 tbsp diced red pepper
- A scoop of coconut yogurt
- A few leaves of cilantro, chopped
Instructions
- In a small saucepan, whisk together the stock, coconut milk, tomato paste and spices until gently bubbling. Remove from heat.
- Pour oatmeal cups into a bowl and stir in vegetable stock/coconut milk mix. Season to taste with salt & pepper. Set aside for 2 minutes.
- Heap the chickpeas on top of the oatmeal, followed by the red pepper.
- Add a scoop of coconut yogurt and sprinkle chopped cilantro leaves over the oatmeal.
