Mushroom & Spinach Oatmeal

Mushroom & Spinach Oatmeal Recipe

Ingredients
- 1 tsp olive oil
- 1 cup mixed mushrooms, chopped finely (cremini, oyster)
- 1 clove garlic, minced
- ½ packed cup spinach
- 2 sachets Nature's Path Superseeds & Grains Oatmeal
- 1 cup vegetable stock (boiling)
- ½ tsp dried thyme
- sea salt & black pepper
- 3 tbsp toasted walnut pieces
Instructions
- In a skillet, heat the olive oil on medium heat and add the mushrooms and garlic. Sauté for 3 minutes until mushrooms are softened. Add salt to taste.
- Add the spinach and sauté for a further 2 minutes until wilted. Remove from heat.
- Pour oatmeal sachets into a bowl and stir in vegetable stock and thyme. Stir and set aside.
- Season the oatmeal to taste with salt and pepper.
- Add the spinach/mushroom mixture to the oatmeal bowl and top with toasted walnuts for a nourishing meal.
