Tropical Tapioca Pudding

Tropical Tapioca Pudding Recipe

Ingredients

  • 1 can (400 ml) coconut milk
  • 3 tbsp tapioca granulates
  • 1 tbsp coconut sugar OR maple syrup
  • 1/2 tsp vanilla extract, optional
  • 1/2 cup Gorilla Munch Cereal
  • 1/2 cup fresh fruit such as berrie, kiwis, mango, or pineapple
  • 1 tbsp shredded or desiccated coconut

Instructions

  1. Place coconut milk in a medium sauce pan and bring to a boil.  Add tapioca granulates and whisk to combine. Reduce heat to medium-low and cook at a simmer for 12-15 minutes, or until liquid thickens. Remove from heat and whisk in coconut sugar and vanilla extract (if using). Set aside to cool. Chill to room temperature and serve or chill overnight in refrigerator.
  2. Right before serving, top with Gorilla Munch Cereal, fruit and coconut.
