Strawberries and Cream Waffle Bites

These cute and kid-friendly waffle bites make a delicious and simple brunch-time appetizer. Make the cream the night before to make your morning prep even easier.

Strawberries and Cream Waffle Bites Recipe

Ingredients

  • 1 (13.5 oz.) can full-fat coconut milk, refrigerated overnight
  • 2 tablespoons powdered sugar
  • ¼ cup vanilla Greek yogurt of choice
  • 1 box Nature’s Path Homestyle Waffles
  • 1 pound organic strawberries, stems removed
  • Toothpicks, for assembly
  • Maple syrup, for drizzling
 

Instructions

  1. Open the can of refrigerated coconut milk and scoop out the cream on top (you should get about 1/2 to 3/4 cup) and place in the bowl of a mixer along with the powdered sugar. Use the whisk attachment to whisk on medium-high speed until smooth peaks form, about 2 to 5 minutes. Add the yogurt and whisk until well combined and smooth. Refrigerate until ready to use.
  2. Prepare the waffles according to package directions.
  3. To assemble, cut the waffles in quarters. Add a strawberry and a dollop of cream on top of each quarter. Insert a toothpick to hold it all together. Repeat with remaining waffles. Drizzle with maple syrup and serve immediately.
