Strawberries and Cream Waffle Bites
These cute and kid-friendly waffle bites make a delicious and simple brunch-time appetizer. Make the cream the night before to make your morning prep even easier.
Strawberries and Cream Waffle Bites Recipe

Ingredients
- 1 (13.5 oz.) can full-fat coconut milk, refrigerated overnight
- 2 tablespoons powdered sugar
- ¼ cup vanilla Greek yogurt of choice
- 1 box Nature’s Path Homestyle Waffles
- 1 pound organic strawberries, stems removed
- Toothpicks, for assembly
- Maple syrup, for drizzling
Instructions
- Open the can of refrigerated coconut milk and scoop out the cream on top (you should get about 1/2 to 3/4 cup) and place in the bowl of a mixer along with the powdered sugar. Use the whisk attachment to whisk on medium-high speed until smooth peaks form, about 2 to 5 minutes. Add the yogurt and whisk until well combined and smooth. Refrigerate until ready to use.
- Prepare the waffles according to package directions.
- To assemble, cut the waffles in quarters. Add a strawberry and a dollop of cream on top of each quarter. Insert a toothpick to hold it all together. Repeat with remaining waffles. Drizzle with maple syrup and serve immediately.
