Oatmeal Blueberry Pancakes
An easy breakfast for kids, these oatmeal pancakes are both energizing and delicious.
Oatmeal Blueberry Pancakes Recipe

Ingredients
- 3 packages Brown Sugar Maple Oatmeal
- 1 cup all-purpose or spelt flour
- 2 tsp baking powder
- pinch of salt
- 1 cup milk, or milk alternative
- 1 cup sugar-free applesauce
- 1/2 tsp vanilla extract, optional
- 1 cup blueberries, fresh or frozen
- 1 tbsp coconut oil
Oatmeal Crumble:
- 1 packages Brown Sugar Maple Oatmeal
- 2 tsp coconut oil
- Maple syrup and/or additional berries for serving.
Instructions
- Mix oatmeal, flour, baking powder, and salt together in a large bowl. Add milk, applesauce, and vanilla (if using). Mix until just blended, some small lumps are fine. Gently mix in blueberries.
- Heat coconut oil in a skillet or a frying pan over medium heat. Add pancake mixture by 1/4 cup and cook for 3-5 minutes per side, or until pancakes are nicely browned and cooked through.
- To make crumble, mix oatmeal and oil together. Bake at 425° F for 10-15 minutes, or until golden brown.
- To serve, stack pancakes and top with crumble, additional berries, and maple syrup.
