Mixed Berry & Bran Fruit Crisp
This simple one-bowl fruit crisp is made with minimal sugar, frozen berries, healthy cereal, and oats. Use organic cane sugar or coconut sugar for a more naturally-sweetened dessert. Serve this fruity berry crisp with coconut whip for a delicious cold-weather dessert that still whispers “summer”.

Crisp
- 3 cups (750ml) frozen mixed berries (I used blueberries and raspberries)
- 1 tbsp (15ml) cornstarch
- 3 tbsp (45ml) sugar
- 1/2 cup (125ml) SmartBran Cereal
- 1/4 cup (60ml) flour
- 1/2 cup (125ml) Old Fashioned Oats
- 1/3 cup (80ml) melted vegan butter
Coconut Whip
- 14 fl. oz (414 ml) can of high quality coconut cream, chilled overnight
- 2 tbsp berry sugar
- Flaked coconut, to serve

- Preheat oven to 350°F. Line a loaf pan with parchment paper.
- Layer berries into the pan.
- Sprinkle evenly with sugar and cornstarch.
- In a bowl, combine SmartBran Cereal, sugar, flours, old fashioned oats, and vegan butter. Stir well until the mixture sticks together a little bit.
- Top the previously sprinkled berries evenly with the crumble mixture.
- Bake for 40 minutes or until the topping appears lightly golden-brown.
- Serve with coconut whip (directions below) and flaked coconut.
- Open chilled coconut cream and scoop out the thickest portion. Discard or save the remaining coconut water for smoothies.
- Beat the thick coconut cream with 2 tbsp berry sugar. Beat on high speed until coconut cream is thick and airy.
- Chill until needed.
