Horchata
A refreshing cinnamon flavoured dairy-free beverage. This traditional spiced Mexican drink is made with a base of rice and almonds and served chilled.
Horchata Recipe

Ingredients
- 1/2 cup long grain white rice, soaked for 3 hours
- 2 tbsp blanched almonds, soaked for 3 hours
- 1/3 cup + 2 tbsp granulated sugar
- 1/4 cup soy milk
- 1/2 tsp cinnamon
- 1/4 tsp vanilla
- Pinch sea salt
- Water
Instructions
- In a jar with a lid, combine rice, almonds, and enough water to cover. Let sit for 3 hours at room temperature.
- Combine soaked rice and almonds (including water), sugar, soy milk, cinnamon, vanilla, sea salt and enough water to bring the total volume up to 1 litre.
- Blend on high until smooth. Strain if desired.
- Serve over ice.
