Horchata

A refreshing cinnamon flavoured dairy-free beverage. This traditional spiced Mexican drink is made with a base of rice and almonds and served chilled.

Horchata Recipe

Prep time: 5 Minutes
Servings: 4 cups

Ingredients

  • 1/2 cup long grain white rice, soaked for 3 hours
  • 2 tbsp blanched almonds, soaked for 3 hours
  • 1/3 cup + 2 tbsp granulated sugar
  • 1/4 cup soy milk
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla
  • Pinch sea salt
  • Water

Instructions

  1. In a jar with a lid, combine rice, almonds, and enough water to cover. Let sit for 3 hours at room temperature.
  2. Combine soaked rice and almonds (including water), sugar, soy milk, cinnamon, vanilla, sea salt and enough water to bring the total volume up to 1 litre.
  3. Blend on high until smooth. Strain if desired.
  4. Serve over ice.
