Granola Fudge Bars

Can we all agree that peanut butter and chocolate are a match made in heaven? Bite into layers of crispy granola, creamy salted fudge, and simple homemade chocolate with these decadent bars.

Granola Fudge Bars Recipe

Ingredients

For the Base:

For the peanut butter fudge:

  • 375g smooth unsalted peanut butter
  • 85g maple syrup
  • 70g virgin coconut oil
  • 1/4 tsp sea salt, to taste

For the chocolate layer:

  • 80g virgin coconut oil
  • 30g cocoa powder
  • 25g maple syrup
  • 1 pinch flaked sea salt, optional for topping

Instructions

To make the base:
  1. Line a loaf pan with plastic wrap and set aside.
  2. Place dates and coconut oil in a food processor until mixture is smooth and only small bits remain. This takes about 45 seconds - 1 minute.
  3. In a mixing bowl add puffed rice, oats and flax seeds. Pour in the date sauce and mix. Transfer base mixture into the lined pan and press down gently until evenly spread. Transfer to freezer to set.

To make the Fudge:

  1. Place all ingredients in food processor and blend until smooth. Taste and adjust salt to your liking.
  2. Pour the fudge over the base layer and smooth out with a spatula.
  3. Place in the freezer to set for 20 minutes.
To make the chocolate topping:
  1. Whisk together coconut oil, maple syrup, and cocoa in a small bowl.
  2. Drizzle over fudge bars and lightly sprinkle with sea salt.
  3. Slice into bars and enjoy immediately or store in a sealed container in the freezer for up to 3 months.
