Coconut Yogurt & Granola Parfait

Coconut Yogurt & Granola Parfait Recipe

Ingredients

  • 400ml coconut milk
  • 2 probiotic capsules
  • 165 grams of Nature's Path Granola
  • 1 handful fresh berries
  • 20g maple syrup

Instructions

  1. To make the yogurt, scoop out coconut milk into a jar or bowl.
  2. Split open two probiotic capsules and stir into the milk. Cover with cheesecloth or a clean dish towel and place in a warm spot. I put on a stool near my heat vents and that has yielded great results. Another great spot would be in the oven with the light on - be careful not to turn on the heat though! Allow the mixture to ferment for up to 48 hours and don't be afraid to taste it along the way. You're aiming for tangy and slightly sour.
  3. Once the yogurt is tangy enough for your tastebuds, transfer it to the fridge for an hour or two to firm up. The result should be a thick and creamy yogurt!
  4. To serve: Whisk the maple syrup into the coconut yogurt.
  5. Spoon a few tablespoons of yogurt into 2 jars or bowls, followed by a small handful of granola. Continue layering the jars with remaining granola and yogurt. Top with fresh berries and enjoy!
