Cinnamon Mocha Chia Seed Pudding

Cinnamon Mocha Chia Seed Pudding Recipe

Ingredients
- 1/2 cup Qi'a Superfood Cereal - Original
- 1/2 cup non-dairy milk
- 1/4 cup strong coffee or espresso
- 1/3 cup non-dairy yogurt
- 3 tbsp chopped dark chocolate
- 3 tbsp chopped cashews
- 2 tbsp maple syrup
- Pinch cinnamon
- Pinch salt
- Love Crunch Chocolate Cinnamon & Cashew Granola, for topping
Instructions
- Combine the Qi’a cereal, non-dairy milk (any variety will work), coffee, yogurt, dark chocolate, cashews, maple syrup, cinnamon, and salt in a medium-sized bowl or a large jar with a tight-fitting lid. Stir or shake well, ensuring that any lumps of Qi’a cereal are broken up.
- Refrigerate for a minimum of 2 hours (overnight is best to allow the Qi’a cereal to hydrate completely.)
- Stir well, and thin the chia seed pudding with a splash of non-dairy milk if desired.
- Top with a sprinkle of Love Crunch Chocolate Cinnamon & Cashew Granola. Enjoy!
