Chickpea Hummus Oats

Ingredients
- 1 3/4 cup water
- 1 cup Nature's Path Organic Quick Oats
- 2 tbsp minced fresh parsley
- 1 tbsp tahini
- 1 tbsp fresh lemon juice
- 1/4 tsp sea salt
- 1/4 cup cooked chickpeas
Instructions
- Combine water and oats in a small saucepan. Bring to a boil, then reduce heat to medium and simmer for 1 minute, stirring occasionally, until desired texture is achieved.
- Stir in the parsley, tahini, lemon juice, and salt. Remove from heat and scoop into a large bowl or divide into two small bowls. Top with chickpeas and serve.
