Buttercup Sandwich Cookies

Delicate and sweet (like a buttercup), these cookies are made using our delicious and nutritious Gorilla Munch cereal!

Buttercup Sandwich Cookies Recipe

Ingredients

  • 1 cup Vegan Butter softened
  • ½ cup Icing Sugar
  • 1 tsp Vanilla
  • 2 tsp water
  • 1 cup ground EnviroKidz Gorilla Munch Cereal
  • 1 cup Almond Flour
  • 1 cup Corn Starch
  • *Apricot Jam (feel free to use whatever jam flavor you like)

Instructions

  1. Preheat Oven to 350° F degrees 
  2. In a food processor, add the Gorilla Munch cereal and blend until it forms a fine dust. Make sure that there is enough ground cereal to make up a one-cup measurement. 
  3. In a large bowl, mix the butter and sugar together with your hands until it is fully combined. Add the vanilla and water to the bowl and mix until fully incorporated. 
  4. In a separate bowl, sift the flour, corn starch, and Envirokidz Gorilla Munch Cereal. Add the dry ingredients to the butter mixture and incorporate it with your hands. (Add more water 1 tsp at a time if needed). 
  5. Once dough is formed, shape it into a disk, wrap, and place in the fridge for 15 minutes to set up.  
  6. Remove dough from fridge and roll it out to ¼ inch thick. Cut out all the dough using a flower-shaped cookie cutter. On half of the cookies, cut out a circle using the back of an icing tip. 
  7. Place on a lined baking sheet and bake for 10-15 minutes.  
  8. Remove from oven and allow them to cool on a wire rack. Once cooled, match the cookies with a bottom and a top piece. Place a teaspoon of apricot jam in the center of the bottom cookie and place the second cookie on top.  (*feel free to use whatever jam flavor you like)
  9. Dust with more icing sugar and Enjoy.
