Roasted Pear Frozen Yogurt with a Crunchy Choco Topping

 

An easy and healthy frozen yogurt recipe perfect for the whole family! Scoop up a spoonful of the delicious pear flavor and don't forget to top it with our Choco Chimps cereal for a nice chocolately crunch.

 

Roasted Pear Frozen Yogurt with a Crunchy Choco Topping Recipe

Cook time: 220 Minutes
Servings: 2-3 servings

Ingredients

  • 3 pears, peeled and cored
  • 1/3 cup brown sugar
  • 1/3 cup cup water
  • 1 tsp vanilla
  • 2 Tbs butter, chopped into small pieces
  • 2 cups Greek yogurt
  • Choco Chimps Cereal for topping
 

Instructions

  1. Preheat your oven to 400°F.
  2. In a Pyrex or other rimmed baking dish, set your pears at the bottom of the dish and top with brown sugar, vanilla and butter pieces.  Pour water in.
  3. Cook for 40 minutes, pouring the brown sugar water at the bottom of the pan over the pears every few minutes, to enhance the flavor.  Cook until the pears are soft, and the brown sugar mixture has caramelized.  Remove from the oven and let cool.
  4. Blend entire mixture in the blender, and add the yogurt and blend some more.
  5. Refrigerate for an hour or so until chilled, then put in an ice cream maker and churn according to the manufacturers directions.
  6. If you don't have an ice cream maker, place the frozen yogurt in a plastic bowl.  Stir every 30 minutes for the first 2 hours, then freeze.  You will need to eat the frozen yogurt more quickly if you use the stirring method, because there are fewer air pockets, and the frozen yogurt hardens more easily.
  7. To make the topping, spread the cereal on a piece of wax paper.  Combine the melted white chocolate and coconut oil until smooth, and drizzle over the cereal.  Let it cool, then break into chunks, and top the frozen yogurt with it.
