Ingredientes
- 2 cups Chickpea
- ½ cup Peanut Butter – natural and runny
- ¼ cup Maple Syrup
- ½ cup Gluten-Free Rolled Oats
- ¼ cup Dairy-Free Chocolate Chips
- 2 Tbsp Envirokidz Choco Chimp - divided
- 2 Tbsp Envirokidz Koala Crisp – divided
Tip:
- Substitute the peanut butter for seed butter if there is a nut-allergy
- If the peanut butter is too thick, briefly heat it with the maple syrup in the microwave or on the stove-top to make it easier to stir into the chickpea-Envirokidz mixture
- Substitute the maple syrup for honey/vegan honey
Instrucciones
- In a food processor, add the chickpea and pulse a few times until broken down
- Add 1 Tbsp each of Envirokidz Choco Chimp and Envirokidz Koala Crisp. Pulse 3 times
- In a bowl, combine the mashed chickpea-Envirokidz mixture with the runny peanut butter and maple syrup
- Stir in the oats and chocolate chips
- Use a cookie scoop to scoop the dough and roll into a ball between your palms
- Place in the refrigerator and allow it to chill for an hour
- Create your Caterpillar by using the remaining Envirokidz Choco Chimp for the eyes and Envirokidz Koala Crisp for the legs!
