Oatmeal Blueberry Pancakes

An easy breakfast for kids, these oatmeal pancakes are both energizing and delicious.

Oatmeal Blueberry Pancakes Recipe

Servings: 4 servings

Ingredients

  • 3 packages Brown Sugar Maple Oatmeal
  • 1 cup all-purpose or spelt flour
  • 2 tsp baking powder
  • pinch of salt
  • 1 cup milk, or milk alternative
  • 1 cup sugar-free applesauce
  • 1/2 tsp vanilla extract, optional
  • 1 cup blueberries, fresh or frozen
  • 1 tbsp coconut oil

Oatmeal Crumble:

Instructions

  1. Mix oatmeal, flour, baking powder, and salt together in a large bowl. Add milk, applesauce, and vanilla (if using). Mix until just blended, some small lumps are fine. Gently mix in blueberries.
  2. Heat coconut oil in a skillet or a frying pan over medium heat. Add pancake mixture by 1/4 cup and cook for 3-5 minutes per side, or until pancakes are nicely browned and cooked through.
  3. To make crumble, mix oatmeal and oil together. Bake at 425° F for 10-15 minutes, or until golden brown.
  4. To serve, stack pancakes and top with crumble, additional berries, and maple syrup.
