Zesty Peanut Lime Chopped Salad Recipe

5-6 servings
Ingredients
- 3 cups chopped kale
- 2 cups spring mix
- 1 1/4 cups black beans
- 1 1/4 cups corn
- 1.5 cups edamame
- 1/4 cup shelled peanuts
- 1 cup dried pitted dates, chopped
- 1 cup feta cheese, chopped
- 1 avocado, chopped
PEANUT LIME DRESSING
- ¼ cup sunflower oil vegetable
- ¼ cup lime juice lime juice
- 1 tbsp. peanut butter
- 1 tsp sugar
- 1 tsp soy sauce
- 1 tbsp. minced garlic
- 3 tbsp. lime zest
- Que Pasa Tortilla Chips
Instructions
- In a glass mason jar with screw-top lid combine the Peanut Lime Dressing ingredients.
- Shake well until combined and set aside.
- In a large salad bowl toss together the chopped kale and spring mix.
- Add the rest of the salad ingredients (black beans, corn, edamame, peanuts, pitted dates, feta cheese and avocado) on top.
- Arrange in rows if you like.
- Toss and enjoy!
- Serve with Que Pasa Tortilla Chips or break them up and serve on top!
