Zesty Peanut Lime Chopped Salad

Serve up a big bowl of this Zesty Peanut Lime Chopped Salad for deliciously satisfying spring meal. Perfect for adding to a fresh green salad or taking with you in a to-go snack pot.


  • 3 cups chopped kale
  • 2 cups spring mix
  • 1 1/4 cups black beans
  • 1 1/4 cups corn
  • 1.5 cups edamame
  • 1/4 cup shelled peanuts
  • 1 cup dried pitted dates, chopped
  • 1 cup feta cheese, chopped
  • 1 avocado, chopped


  • ¼ cup sunflower oil vegetable
  • ¼ cup lime juice lime juice
  • 1 tbsp. peanut butter
  • 1 tsp sugar
  • 1 tsp soy sauce
  • 1 tbsp. minced garlic
  • 3 tbsp. lime zest
  • Que Pasa Tortilla Chips


  1. In a glass mason jar with screw-top lid combine the Peanut Lime Dressing ingredients.
  2. Shake well until combined and set aside.
  3. In a large salad bowl toss together the chopped kale and spring mix.
  4. Add the rest of the salad ingredients (black beans, corn, edamame, peanuts, pitted dates, feta cheese and avocado) on top.
  5. Arrange in rows if you like.
  6. Toss and enjoy!
  7. Serve with Que Pasa Tortilla Chips or break them up and serve on top!
