Vegan "Bacon" Avocado Toast Recipe

Ingredients
- 2 cups unsweetened coconut flakes (not shredded)
- 2 tbsp coconut aminos (or low sodium soy sauce)
- 3 tsp maple syrup
- 1 ripe avocado
- 2 pieces of bread, toasted
- 1 pinch crushed red pepper flakes, optional
- 1 tbsp hemp hearts or Hemp Hearts Granola, optional
Instructions
- Preheat oven to 325° F and line a baking sheet with non-stick paper.
- Toss coconut flakes, coconut aminos, and maple syrup together.
- Spread evenly in one layer on baking tray and bake for 25-30 minutes or until coconut flakes are a dark golden brown.
- Meanwhile mash avocado with a fork.
- Top toasted bread with avocado, coconut "bacon," red pepper flakes, and hemp hearts (if using).
- Coconut "bacon" can be stored in an airtight container for up to 3 months in the refrigerator.
