Quinoa Salad with Champagne Citrus Dressing

It's great for a quick meal at home, or you can easily prep it ahead of time to take with you on the go - keeping your healthful resolutions going. I mean, champagne (citrus vinaigrette) for lunch? Yes, please!
Quinoa Salad with Champagne Citrus Dressing Recipe

Ingredients
Quinoa Salad:
- 1 can fava beans, washed
- 2 cups cooked quinoa
- 2 oranges, peeled and diced
- 1/2 cup fresh mint, chopped
- 1 pomegranate
- 1/2 cup mixed sprouts
CHAMPAGNE CITRUS DRESSING:
- ⅓ cup olive oil
- 3 tablespoons champagne vinegar
- ¼ cup fresh orange juice
- 1 ½ tablespoons maple syrup
- ½ teaspoon dijon mustard
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Cook the quinoa according to the directions on the package. Once it is cooked, transfer to a medium size bowl and allow to cool in the fridge for 20 minutes.
- In a small bowl, whisk together dressing ingredients and set aside.
- Once quinoa has cooled off, toss all the ingredients and the dressing together. Transfer to your favorite bowl and enjoy immediately.
- This salad will keep well in the fridge for up to 5 days, without the dressing.
