Ingredients
- 4 large ripe tomatoes, diced
- 1 cucumber, peeled and diced
- 1/2 cup diced red pepper
- 1/2 cup diced green pepper
- 1/4 cup diced red onion
- 1/4 cup olive oil
- 2 cloves garlic
- 1 tbsp sherry vinegar
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp cumin
- 1/2 tsp oregano
Instructions
- In a large mixing bowl, toss all ingredients together until the vegetables are well coated.
- Transfer mixture into a blender and puree until smooth.
- Cover and place in the fridge to chill for an hour to allow for a more developed flavour.
- To serve: ladle into bowls and top with olive oil drizzle, cucumber ribbons, fresh chopped cilantro, salt & pepper.
