Pumpkin Flax Energy Bowl

Pumpkin Flax Energy Bowl Recipe

Ingredients
Roasted Vegetables
- 2 carrots, peeled and chopped
- 2 parsnips, peeled and chopped
- 4 cups chopped butternut squash
- 2 tbsp melted coconut oil
- 2 cloves garlic, minced
- 2 tsp minced ginger
- 1 tsp chili powder
- 1 tsp brown sugar
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp ground cinnamon
- 1/4 tsp ground allspice
- 1/4 tsp each salt and pepper
Energy Bowl
- 2 cups cooked red quinoa
- 2 cups sunflower sprouts
- 1 cup Nature’s Path Flax Pumpkin Raisin Crunch Cereal
- 1 avocado, peeled, pitted and sliced
- 1/4 cup plain Greek yogurt (optional)
- Lime Wedges
Instructions
Roasted Vegetables
- Preheat oven to 400°F.
- Toss carrots, parsnips and squash with coconut oil, garlic, ginger, chili powder, brown sugar, cumin, coriander, cinnamon, allspice, salt and pepper.
- Transfer to a baking sheet lined with parchment paper.
- Bake, turning occasionally, for 30 to 40 minutes or until golden brown and tender.
- Divide quinoa between 4 bowls.
- Arrange roasted vegetables, sunflower sprouts, cereal and avocado slices on top.
- Serve with a dollop of yogurt, if desired and lime wedges.
