Lentil Sloppy Joes Recipe

Ingredients
Sloppy Joe Sauce:
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp chili powder
- 1 onion, finely chopped
- 1 cup lentils
- 2 cups mushrooms, chopped
- 1 tbsp vegan Worcestershire sauce
- 1 red pepper, chopped
- 2 cloves garlic, minced
- 1 jar Que Pasa Mexicana Salsa - Medium
- 3/4 cup water
ROASTED YAMS:
- 2 tbsp olive oil
- ½ green onion, chopped
- 2 medium yams, sliced in half lengthwise
Instructions
- Preheat oven to 425ºF and line a baking sheet with parchment paper. Brush each yam with olive oil & sprinkle with a pinch of salt and pepper. Place in oven and bake for 40 minutes, or until the yams are tender when poked with a fork.
- In a medium saucepan, sauté onion and garlic until translucent, about 5 minutes. Add mushrooms and red pepper & sauté until soft, about 5-6 more minutes. Add the salsa, lentils & remaining spices and bring to a low boil. Cover and allow to simmer for 20-25 minutes, or until lentils are cooked, adding more water if necessary.
- Remove yams from oven and allow to cool for a few minutes. Fluff up the yam with a fork and scoop lentil sloppy joe sauce over yams. Top with green onions & serve hot.
