Lemon Coconut Energy Bites
This delicious, no-bake, vegan treat can give you a jolt of zest just when you need it.
Lemon Coconut Energy Bites Recipe

Ingredients
- 1 cup (250ml) raw cashews
- 1 cup (250ml) packed, of soft pitted dates
- 1/2 tbsp (7.5ml) melted coconut oil
- 1/4 tsp (1.25ml) vanilla
- 2 tbsp (30ml) dried cranberries
- 1 tbsp (15ml) lemon zest (juice reserved)
- 2 cup (250ml) Crispy Rice Cereal
- 1/2 cup (125ml) medium shredded coconut
Instructions
- In a food processor, process cashews on high until finely ground. Pour cashews into a bowl.
- To the food processor, add pitted dates, coconut oil, and vanilla. Process on high until dates form a ball and then disperse evenly. Scrape the sides and add cashews, cranberries, and lemon zest. Process on high until a ball begins to form. (If the mixture appears dry add a splash of lemon juice and process again.) Add the Crispy Rice Cereal and pulse to mix while leaving plenty of cereal intact.
- Form mixture into balls and roll in coconut.
