Even Mexican-inspired cuisine can't escape the ubiquitous kale - much to our delight! These Kale Caesar Bites will wow guests at your next potluck, movie night, or tailgate party.
Kale Caesar Bites Recipe

Ingredients
- 1/4 cup Greek yogurt
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 2 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/4 tsp each salt and freshly ground pepper
- 4 cups stemmed and finely shredded dinosaur kale
- Que Pasa Yellow Corn Tortilla Chips
- 1/4 cup shaved Parmesan cheese
- Lemon wedges
Instructions
- Whisk the yogurt with olive oil, lemon juice, garlic, Worcestershire sauce, mustard, salt and pepper.
- Toss kale with yogurt dressing.
- Top tortilla chips with 1 tbsp Kale Caesar.
- Garnish with shaved Parmesan.
- Serve on large platter with lemon wedges.
