Gorilla Munch French Toast Bake

Gorilla Munch French Toast Bake Recipe

Ingredients
- 2 tbsp vegan butter
- 2/3 cup brown sugar, divided
- 2 apples, peeled, cored and chopped
- 1/2 cup dried cranberries
- 8 slices gluten-free bread, cut in half on diagonal
- 1 cup unsweetened almond milk
- 2 tsp powdered egg replacement
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 3/4 cup EnviroKidz Gorilla Munch Cereal
Instructions
- Preheat oven to 375°F.
- In a medium skillet set over medium heat, melt vegan butter and 1/3 cup brown sugar.
- Add apples and cranberries.
- Sauté for 10 to 15 minutes or until apples are golden brown and tender.
- Set aside.
- Arrange bread slices in 9x13-inch baking dish.
- In large bowl, whisk together almond milk, egg replacement, remaining sugar, cinnamon and vanilla.
- Pour over bread, pressing lightly so that bread absorbs all the mixture.
- Sprinkle with cereal and sautéed apples mixture.
- Bake for 45 to 50 minutes or until tester comes out clean when inserted in centre.
- Serve with maple syrup.
