Flax Plus and Dark Chocolate Goji Berry Cookies

Organic chef Akasha Richmond created these incredible cookies. With a mixture of goji berries, Flax Plus cereal and maple syrup, it's a good job this recipe makes 25+ cookies. They won't be around long!

Flax Plus and Dark Chocolate Goji Berry Cookies Recipe

Servings: 27 large cookies

Ingredients

  • 2 cups unbleached flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup unsalted butter
  • ½ cup palm sugar
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups Nature’s Path Flax Plus Multibran Flakes, crushed by hand or with a rolling pin
  • 1 cup chocolate covered goji berries or chocolate chips

Instructions

  1. Preheat the oven to 325°F.
  2. Line several baking sheets with parchment paper or coat with nonstick spray.
  3. In a medium bowl, whisk together the flour, baking soda, and salt; set aside.
  4. In a large bowl, with an electric mixer on medium speed, beat together the butter and sugar until lightened.
  5. Slowly add the maple syrup and beat until fluffy and smooth.
  6. Beat in the vanilla extract.
  7. Stir in the flour mixture with a rubber spatula until evenly incorporated.
  8. Stir in the cereal and goji berries until mixed.
  9. Drop by large spoonfuls (about 2 ½ tablespoons), 2-inches apart onto the prepared cookie sheets.
  10. Bake for 10-12 minutes or until lightly browned.
  11. Cool on sheets for 3 to 4 minutes then transfer to a wire rack to cool completely.
