Cranberry Pear Crumble Recipe

Ingredients
For the crumble:
- 1 1/2 cups rolled oats
- 1/2 cup spelt flour
- 1/2 cup coconut sugar
- 1/3 cup coconut oil
- 1/4 cup flax seeds
- 1 tsp cinnamon
For the filling:
- 3 pears, cored and cubed
- 1/2 cup cranberries
- 1/4 cup coconut oil, melted
- 1 tbsp lemon juice
- 1/2 tsp cinnamon
- 1/4 tsp ground cloves
Instructions
- Preheat oven to 375.
- Lightly grease a small casserole dish.
- For the filling: In a bowl, toss together pear, cranberries, coconut oil, lemon juice, and spices. Mix gently to ensure everything is evenly coated. Pour into casserole dish.
- For the crumble : In a separate bowl, add dry ingredients and mix well.
- Pour melted coconut oil over the oat mixture and gently mix.
- Layer the crumble over the fruit mixture in the baking pan and transfer to oven to bake for 30-40 minutes.
- Serve warm on its own or with a scoop of vanilla ice cream.
