Cranberry Pear Crumble Recipe

Ingredients

For the crumble:

  • 1 1/2 cups rolled oats
  • 1/2 cup spelt flour
  • 1/2 cup coconut sugar
  • 1/3 cup coconut oil
  • 1/4 cup flax seeds
  • 1 tsp cinnamon

For the filling:

  • 3 pears, cored and cubed
  • 1/2 cup cranberries
  • 1/4 cup coconut oil, melted
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon
  • 1/4 tsp ground cloves

Instructions

  1. Preheat oven to 375.
  2. Lightly grease a small casserole dish.
  3. For the filling: In a bowl, toss together pear, cranberries, coconut oil, lemon juice, and spices. Mix gently to ensure everything is evenly coated. Pour into casserole dish.
  4. For the crumble : In a separate bowl, add dry ingredients and mix well.
  5. Pour melted coconut oil over the oat mixture and gently mix.
  6. Layer the crumble over the fruit mixture in the baking pan and transfer to oven to bake for 30-40 minutes.
  7. Serve warm on its own or with a scoop of vanilla ice cream.
