Chai Apple Chia Pudding
Warming spices and delicious sauteed apples make an easy, healthy and impressive breakfast, snack, or even dessert. Layer with granola to create a chia pudding parfait.
Chai Apple Chia Pudding Recipe
Ingredients
- 1.5 cups almond milk
- 1/4 cup chia seeds
- 1/4 tsp cinnamon
- 1/4 tsp ground cardamom
- 1/4 tsp nutmeg
- 1-2 tbsp maple syrup
- 1/2 tsp vanilla extract
Sauteed Apples
- 1-2 apples peeled and roughly chopped
- 1 tbsp maple syrup
- 1/2 tbsp cinnamon
Toppings (optional)
- 1-2 tbsp chopped toasted pecans
- Pumpkin Flax Granola
Instructions
- To make the sauteed apples, place the ingredients in a small saucepan over medium heat. Cook for 5-10 minutes. (Depending on the type of apple you use, you may have more of a compote. We've used granny smith here - which remain firm when cooked).
- Set apples aside to cool.
- Whisk chia pudding ingredients together vigorously. Cover and place in the fridge for an hour. Stir to break up any clumps. (Can be stored overnight)
- Serve with the apples and pecans. Layer with Pumpkin Flax granola for extra crunch.
