Double Layer Funfetti Cake

Anyone who is a fan of kids' cereal is going to go loopy over this dessert. Perfect for birthdays or as a special weekend treat, this simple vanilla cake is made pretty with pink-hued Cheetah Chomps, which are naturally coloured with fruits and veggies.
Ingredients
Cake:
- 2 1/4 cups unbleached all-purpose flour (or gluten-free all-purpose flour + 3/4 tsp xanthan gum)
- 2 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp sea salt
- 1 1/2 cups non-dairy milk
- 1 cup cane sugar
- 1/2 cup melted vegan butter
- 1 tbsp apple cider vinegar
- 1 tsp pure vanilla extract
Buttercream:
- 1 cup vegan butter, at room temperature
- 3 1/2 cups icing sugar
- 1 tsp pure vanilla extract
- 2 tbsp non-dairy milk, if needed
- Envirokidz Cheetah Chomps Cereal, for decorating
Directions
- To make the cake, preheat the oven to 350F and lightly oil two 8-inch round cake pans.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, combine the non-dairy milk, sugar, vegan butter, vinegar, and vanilla and whisk vigorously until well combined. Add the flour mixture and stir gently until combined and no large clumps of flour remain.
- Divide the batter between the two prepared pans. Bake for 20 to 22 minutes, or until a toothpick inserted in the centre of the cake comes out clean. Allow to cool for about 30 minutes, then invert the cakes onto a rack to cool completely.
- To make the buttercream frosting, use a stand mixer to beat the butter until smooth. Add the icing sugar, one cup at a time, and continue mixing until light and fluffy. Add the vanilla and mix until well combined. Add the non-dairy milk if needed to thin out. The buttercream should be light and fluffy.
- To assemble the cake, place one cake layer on a cake plate and spread a layer of frosting on top. Place remaining cake layer on top. Spread top and sides of cake with remaining frosting, smoothing out as you go. Use the cereal to decorate the sides or top of the cake as desired.
